I love making soups, LOVE LOVE LOVE making soups. For the most part… I do not follow a recipe. I was pleasantly surprised tonight when I came up with this!

The picture was taken after we devoured it until our bellys were full.

Shasher’s Soup

What you’ll need:

2 TBSP Butter
1 medium onion
3 cloves of garlic
salt and pepper to taste
can of diced tomatoes
1 bag of dry bean/rice soup mix
2 900 ml containers of chicken broth
1 cup of water
2-3 TBSP of fresh parsley (I might have added a 1/4 cup… I was winging it)
dried bay leaves (I added 2 small leaves)
more garlic (to taste, I think added 3 or 4 more cloves)
a few pinches of ISOP pepper flakes

What you’ll do:

I Melted the butter in a soup pot
Chopped an onion and add it to the melted butter
Added the chopped garlic cloves
Added salt and pepper and cooked the onion until soft, around 5 minutes
Added the bag of dry bean/rice soup mix
Added the can of diced tomatoes (do not drain)
Added the 2 containers of chicken broth
Added a cup of water (it would have been OK with 2 cups of water, next time…)
Added a couple handfuls of fresh parsley, a couple small bay leaves, salt & pepper to taste and I added 3 more cloves of garlic

I brought it to a boil on high heat and then put it down to simmer, left it simmering for about 1 1/2 hours. Added a few pinches of ISOP pepper flakes (a sweet/spicy red pepper) then let it simmer for a few more minutes.

Voila!

  2. You Will Need…

    2 Rinsed Lemons
    10 Rinsed Mint Leaves
    1 rinsed piece of Ginger Root
    A pitcher of icy water
    1. Slice up one rinsed of your lemons. Put the slices in the pitcher

    2. Tear your rinsed Mint Leaves and put them into your pitcher

    3. Peel a small part of the ginger root and cut 3 small slices.

    4. Let steep, pour into a glass, and enjoy!

  3. I made a yummy soup last week that I just threw together…J FINALLY said this is good…first time ever he has said anything good about my soup…not that I make bad soup but I could never come close..till now!… to his mom and grandmothers soups!!! yah finally!!

  4. I had to add more chicken stock in the morning, the full bag of bean/rice dry mix was too much for the amount of liquid I had put in. So then I added a half can more of diced tomatoes, another couple of garlic cloves and a few more pinches of ISOP pepper flakes.

    It was even better the second day!
